I don't find Aya bland, just hard to relate to. It seems like AnC would be a better story if it were just a bit more fleshed out. FY was pretty well-fleshed out in the volumes it took up, but I believe in the later double-digit manga (14?) extended the story a bit too far, which is why the OAVs and Eikoden got made. It was great finally seeing some real resolution with Miaka and Tamahome/Taka, though, and in a way, knowing what happened to the other Seishi.
I stopped watching Inuyasha around episode 71 (I don't think I've ever seen any of the movies), and I stopped reading the manga way before that. I got sick of the slowness of Viz' release, too. Contrary to how I read and write fics, I prefer reading manga when I know it's ending (soon) or has already ended (in Japan).
